Not long ago I found a book I had read in my early teens on sale for the Kindle. I decided that for such a low price a good book that I already loved was well worth the buy. In the book the main character works with her sister at a candy shop in the 1600's in London. The book is set at the start of the Black Plague. I remember wishing to learn how to make the sweetmeats and comfits and such and since I am rereading it now I recalled how I wanted to learn how to and decided to look for a recipe. I found a simple one for candied rose petals, which are one of the stables of their shop. These are photos of the ones that I made. These roses came from my own yard.

They are super easy to make. All you need is 1 egg white and some granulated sugar. Make sure the roses you use have no pesticides!

First you must clean and rise the roses. The roses must be dried completely when you go to start. Don't forget to cut off the white parts of the petals for these can be bitter. Once they are dry, using clean tweezers, dip them into the lightly beaten egg white and then into the sugar. You can use a spoon to help you coat them. Shake off the excess sugar and place them either on a baking sheet covered with wax paper or on a wire rack. Let dry completely. It takes about 2-3 hours or so.
